With Miniony Goodness Baked Right In

Oh, wait, I forgot. She’s Canadian. That explains everything…

Well, this week’s bit o’ sacrifice to the Mistress of Montreal involves food. Specifically, the command from up north reads, “Bake, Minions of Billegible!

And so, we present: Hidden Surprise Cookies


Ingredients
1/2 cup butter
1/4 cup butter-flavored shortening
1 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1 egg
2 egg yolks
2 teaspoons vanilla
2 1/2 cups flour
1/3 cup sifted powdered sugar
2 tablespoons cocoa powder
1 tablespoon melted butter
1/4 teaspoon almond extract
coarse colored sugar

Instructions
Beat butter and shortening with electric mixer on medium to high speed for 30 seconds.
Add sugar, baking powder and salt; beat till combined.
Beat in egg, egg yolks and vanilla till combined.
Beat in as much flour as possible with mixer; stir in any remaining flour by hand.
Transfer 3/4 cup of dough to a small bowl.
Add powdered sugar, cocoa powder and melted butter.
Beat well.
Shape into 1 inch balls.
Beat almond extract into remaining dough.
Mold about 1 tablespoon almond dough around chocolate dough.
Roll gently to make smooth round ball.
Roll each ball in colored sugar.
Bake 2 inches apart on greased cookie sheets at 375 degrees for 10 – 11 minutes.
Cool on pan for 1 minute before transferring to wire racks.

    It’s not my problem if the other evil overlords squander their days of power, you know. If you don’t keep your minions working, they get all flabby.
